Founder and Sole has gained popularity in the US over the past few years and is highly regarded in Asian countries where it is used for sashimi. The fishery peaks in spring and autumn, but product, mainly fillets is available throughout the year in frozen form. Cooking MethodsLike any other mild and delicate tasting fish, be careful not to overpower its natural flavor with strong sauces. If you bake it, be sure to keep basting the meat to prevent it from drying out. It is also good sauteed, poached or steamed. It is recommended that fillets be undercooked as the meat continues to cook after it leaves the pan. |
