Frostmark Ocean Perch

Ocean Perch supports a considerable fishery, although the slow growing species is easily stressed by fishing, causing fluctuations in the supply from different areas. It is normally trawled in deep water. Consumers in northern Europe and North America like this fish, which is adaptable in cooking and attractive on the plate with its red skin. Supplies have been limited in recent years, but the taste for this fish appears to be steady.

Cooking Methods
Ocean Perch is best when baked or poached. Gently cooking brings out the delicate flavor. It is also good grilled and pan fried.
