Greenland turbot, a large flatfish, is a lean, white fish that is prized by gourmets. A traditional flatfish presentation would be with the fillet wrapped around a crabmeat stuffing or poached in white wine and smothered with sweet coldwater shrimp. Rich in Omega-3s it is also ideal for smoking.
